“Vegetable soup” is a general term used in Nigerian cooking parlance to describe soups in which green vegetables are the main ingredient. Notable variations exist in Yorubaland (in which it is known as efo riro) and Cross River/Akwa Ibom (the two most popular of which are known as Edikaikong and Afang). In this version, a mixture of the two is adopted, with the addition of vegetables more peculiar to the Igbo (fluted pumpkin leaves, or ugu).
